Crispy oyster mushrooms
A quick, high-heat sear that turns oyster mushrooms golden and crisp at the edges.

Ingredients
- 250 g oyster mushrooms, torn into strips
- 1 tbsp neutral oil
- 1 tbsp butter
- Salt to taste
- Optional: garlic, lemon, parsley
Steps
- Heat oil in a wide pan over high heat.
- Add mushrooms in a single layer; don't crowd.
- Sear undisturbed until golden underneath, then toss.
- Add butter near the end, season, and finish with lemon if using.
Oyster mushrooms crisp up beautifully when you give them space and heat.
