Crispy oyster mushrooms

A quick, high-heat sear that turns oyster mushrooms golden and crisp at the edges.

Ingredients

  • 250 g oyster mushrooms, torn into strips
  • 1 tbsp neutral oil
  • 1 tbsp butter
  • Salt to taste
  • Optional: garlic, lemon, parsley

Steps

  1. Heat oil in a wide pan over high heat.
  2. Add mushrooms in a single layer; don't crowd.
  3. Sear undisturbed until golden underneath, then toss.
  4. Add butter near the end, season, and finish with lemon if using.
